A bold 10% imperial stout brewed in collaboration with our new friends from Tartu, Estonia, who came to visit recently for our Dark and Wild Fringe Festival tap takeover. Opening in 2016, Pühaste are renowned for their bold and diverse beer styles and have gained a reputation for their highly acclaimed barrel-aged series, which have inspired this recipe. The stout is a blend of rich barrel-aged layers, drawing depth from brandy, scotch whisky, and bourbon barrels. It greets you with a subtle warmth of vanilla and the unique taste of Indian long pepper, also known as pippali, often used in Indian, Malaysian and Indonesian cooking. It brings a warming, earthy spice with hints of black tea and dried fruit, adding a complex dimension that balances beautifully against the stout's rich body.
